Ingredients:
- 1 onion,
- 1-2 potatoes
- 2-4 carrots
- other veggies
- Thai green curry paste
- 12 once can coconut milk
- ground cayenne pepper
Instructions:
- Chop the onions, potatoes, and veggies into bite size pieces.
- Saute the onions until brown, using water instead of oil to keep them from sticking to the pan (5 minutes). Add the carrots and continue sauteing (another 5 minutes).
- Add coconut milk. Add equal portion of water.
- Add two or three table spoons of curry paste. Sprinkle small amount of cayenne pepper (more if you want it spicy).
- Add the potatoes and other veggies. Bring to a just under boiling for 5-10 minutes. Then simmer on low for 30 minutes.
- Serve on brown rice.

ReplyDeleteI got the curry paste at Safeway, in the "Ethnic" section. It's a psste in a small spice-sized container. And I will make it :)
